
Why Did We Made Jerky With Bison Liver in It?
At Ranger Bison, we’re always looking for ways to make better use of the whole animal—and offer our customers something that’s both simple and deeply nourishing. Our Ancestral Blend Jerky came from that effort.
By blending 70% bison muscle meat with 30% bison liver, we’re able to offer a high-protein snack that brings in some of the most nutrient-dense parts of the animal—without overcomplicating it.
Why Liver?
For generations, liver was a staple food in households across the world. It’s known as one of the most nutrient-rich foods you can eat, packed with things like:
- Iron
- B Vitamins (especially B12 and riboflavin)
- Vitamin A
- Copper and zinc
- Complete protein
These nutrients occur naturally in liver—no synthetic additives or blends required. And while most people today aren’t reaching for liver in the kitchen, we saw an opportunity to make it more approachable, especially for those already seeking cleaner sources of protein.

Why We Made It
Honestly? It started in our home kitchen. We wanted to use the whole animal and avoid waste, and we knew the nutritional value of liver was hard to beat. So we started experimenting—grinding in small amounts of liver, adjusting the spice ratios, and taste testing with friends.
The result was a jerky that felt like it offered a little more. Not trendy. Not over-processed. Just real meat, real flavor, and a respectful use of a remarkable animal.
